Recipes

So I have this sweet friend who has a wonderful blog with simple/easy recipes that are so good and affordable. (Here is a link to her blog.) It has been so helpful to have these recipes as I have come off of my maternity leave from cooking. Hehe!!! I thought I needed to share the simple recipes that I have too!

The two chicken recipes below were given to me by a co-worker at ACS. I believe her friend was a nutritionist that gave her the recipes. They are so easy and really good!!!

Oven-Fried Chicken Fingers
makes 6 servings
2 cups water
1.5lb boneless, skinless chicken breast cut into strips
1/2 cup nonfat buttermilk
3 cups coarsely crushed corn flakes
2 tsp Creole seasoning
1 1/2 tsp Italian seasoning
1/2 tsp black pepper
Cooking spray
1. combine water and salt in large bowl with the chicken. Cover and chill at least 1 hour.
2. Preheat oven to 400 degrees. Remove chicken from water and place in shallow dish. Cover with buttermilk, turning to coat. Set aside.
3. Combine cornflakes and pepper in a large, heavy-duty ziplock bag. Place half of chicken in bag, seal and shake to coat chicken completely. Remove chicken and repeat with remaining chicken.
4. Place coated chicken on baking sheet coated with cooking spray. Spray chicken with cooking spray and place on lowest rack in oven. Bake uncovered fro 25-30 min or until done.

Honey Dijon Chicken
makes 4 servings
2 tablespoons honey
2 tablespoons Dijon mustard
4 boneless, skinless chicken breast
1/2 teaspoons ground black pepper
2 teaspoons fresh flat leaf parsley
1. Preheat oven 400 degrees. Line baking sheet with foil; lightly coat with nonstick cooking spray.
2. Combine honey and mustard in small bowl. Place chicken on prepared baking sheet. Sprinkle with pepper.
3. Back 15 min. Brush with honey-mustard mixture. Return to oven, brushing twice with additional glaze, for 15-20 min or until chicken is no longer pink in center. Sprinkle with parsley.
(If I do not have fresh parsley I have used dried and mixed it in with the honey-mustard mixture. You can also marinate the chicken in the honey mustard mixture and grill.)

30 Min Chili
This recipe comes from Southern Living and I love it! It is soooooo easy. You have to make the seasoning yourself but what is great about this is it makes extra so you only have to make one batch of it and store the rest for the next time you make the chili. My friend's husband always has guacamole with his chili. If you haven't tried this it is SO good in your chili!!!

Baked Chicken and Rice with Black Beans
This is another Southern Living recipe and a favorite to make when we have company over. So good and it really does feed 6-8.

Chicken and Rice Casserole
This is a Paula Dean recipe so beware of the butter and mayo!!! I actually omit the mayo and only use half of the butter. So good and one I usually make for new moms.
